I had a great time preparing this super easy Peanut Butter Pie on Channel 5’s Talk of the Town today. This is my go-to dessert for casual dinners, Saturday lunch with the family, or a last-minute potluck dinner contribution. Using ingredients you most likely keep on hand all the time, this pie can be thrown together in minutes!

Strawberry Chicken Salad

An Easy Breezy Summer Strawberry Chicken Salad
(makes 4 meal-sized salads)

I love to make this on steamy summer evenings when I do not want to heat up the kitchen. It’s light, refreshing and nutritious, yet pretty enough for company! Enjoy!

 

 

 

 

 

6 cups baby spinach

1 deli rotisserie chicken1 pint strawberries, sliced
2/3 cup chopped walnuts
2/3 cup feta cheese
½ cup dried cranberries

Remove skin from chicken and pull meat from bone, chopping into bite-sized pieces. Set aside. Heat a large fry pan to medium heat. Arrange walnuts in pan and toast lightly, 3-5 minutes, stirring occasionally. When nuts begin to give off an aroma, they are ready. Don’t let them turn brown or they will be burnt! Remove from heat.

In a large bowl, toss spinach with the Honey Balsamic dressing. Arrange greens on salad plates and top with all remaining ingredients. Serve with triangles of moist zucchini bread ( Fresh Market sells a delicious pre-baked one).

This recipe is absolutely a winner. You won’t believe the flavor you’ll create with the easy-to-prepare sauce. And the chicken…it has that slightly crunchy exterior and super tender inside that will go head to head with any restaurant version you’ve had.
